CHICKEN MUSHROOM AND AVOCADO PASTA

Ingredients:
– 750g pasta (fresh is best e.g. fettuccine)
– 1 shredded barbecued chicken (skin and bones removed)
– 1 avocado (sliced)
– 2 tablespoons olive oil
– 2 small red onions (sliced)
– 400g Swiss Mushrooms (sliced)
– 300ml cream
– 1 cup Chicken Stock
– 1 tablespoon wholegrain mustard
Note: The above recipe is designed to serve 4 people.
Method:
1. Heat oil in frying pan over a medium heat. Add the onions and mushrooms. Stir regularly for 12 minutes or until soft. Add cream, chicken stock and mustard and bring to boil. Reduce heat and simmer uncovered for 5-10 minutes or until sauce thickens slightly.
2. Meanwhile cook pasta in boiling, salted water for 2 minutes or until tender. Drain pasta. Note – Fresh pasta requires plenty of water to avoid it from sticking together.
3. Add mushroom sauce and chicken to the pasta. Stir ingredients over a low heat until heated through. Remove from heat and gently fold in the avocado.
4. Season with salt and pepper and serve to your lucky friends and family.

THE ULTIMATE SHAKE

Get the following ingredients into a blender:
– 2 scoops chocolate (e.g. milo, quick, protein powder, grated chocolate even)
– 1/2 cup of your favourite ice cream (chocolate, cookies&cream, honey, vanilla)
– 1/2 cup Oatmeal (cooked with boiling water)
– 1/2 banana
– 2 cups low fat milk
– 2 tablespoons cottage cheese
– 2 tablespoons honey
And drink up, you will love it!

CLUB SANDWICH

Ingredients:
– 10 slices of bacon, cut in half
– 450g (1lb) cooked chicken breast (sliced)
– 8 slices of whole wheat bread
– 4 slices white bread
– 2/3 cup whole egg mayonnaise
– 1/4 cup finely chopped scallions/spring onion
– 1 teaspoon of dried tarragon
– 2 tomatoes (sliced)
– 4 lettuce leaves
Note: This recipe makes 4 sandwiches….so I hope you are hungry.
Method:
1. Heat a heavy nonstick pan over medium/high heat. Cook bacon 7 minutes turning frequently until crisp and browned. Drain bacon on paper towels.
2. Thoroughly mix mayonnaise, onions and tarragon in bowl. Spread mixture over 1 side of each piece of bread.
3. Divide the bacon and tomato on 4 pieces whole wheat bread and place 4 pieces of white bread on top.
4. Place turkey and lettuce on top of white bread. Top each sandwich with remaining whole wheat bread, mayonnaise side down.
5. Cut each sandwich in half diagonally and stick a toothpick through it if you feel the need.
